I am sure you can tell I am a big fan of the peanut butter & chocolate flavor combination. Just check out a few of my other posts (Peanut Butter Cookie Cups with Nutella Filling, Peanut Butter Chocolate Chip Brownies and Peanut Butter Chocolate Chip Banana Bread). Well this is just another great creation that incorporates those two flavors into one delicious bite!
Recipe yields 32 cookies
Ingredients
1 cup unsalted butter
1 cup light brown sugar
1/2 cup white sugar
2 cups all-purpose flour
1/2 cup cocoa
1/2 tsp baking soda
1/2 tsp kosher salt
2 large eggs
2 tsp vanilla extract
2 cups peanut butter chips
Preheat your oven to 350 degrees. Prepare two baking sheets by lining them with parchment paper. In a small bowl, whisk together flour, cocoa, baking soda and salt.
In a medium bowl, beat together butter and sugars until soft.
Add eggs and vanilla extract to butter mixture and continue to beat until incorporated into mixture.
Add dry ingredients to wet ingredients and stir until just combined being sure not to over mix.
Add peanut butter chips and stir in to mixture so they are evenly distributed.
Using a cookie scoop or your hands, place 1 1/2" balls of dough onto the baking sheets.
Place trays in oven and bake for 10-12 minutes. Cookies should be lightly crispy on the bottom when they are done.
Allow cookies to cool for 2 minutes while remaining on the baking sheets. Then move them to a cooling rack to finish cooling. Hint: It is important to let the cookies sit on the trays for 2 minutes or so before moving them so they set and do not break during the move.
Serve with a nice cold glass of milk and enjoy!
