This simple recipe is a take on a classic lunch staple, the tuna melt. Adding veggies to the tuna salad kicks it up a notch and provides some extra nutrition to keep your energy up throughout the day. This is the perfect lunch and it can be prepared in under 10 minutes! What's not to love about that.
Recipe yields 2 sandwiches
Ingredients
4 slices of bread (I suggest whole wheat or rye)
12 oz can of tuna fish in water
1 tbsp light mayonnaise
1/2 cup shredded carrots
1/2 cup chopped celery
1/4 cup chopped onion
1/2 cup shredded cheese
Turn on your broiler to high and allow to heat up while you prep. In a medium bowl, combine tuna fish (drain the water out first), mayonnaise, carrots, celery and onion.
Place bread on a baking sheet top each with slice with the tuna fish mixture.
Sprinkle with shredded cheese.
Place under the broiler for 2-3 minutes. You want the cheese to be melted and the bread slightly toasted. Note: Make sure you keep an eye on it while it is under the broiler because the cheese can burn really quickly!
Place on a dish and serve immediately. Enjoy!
